Amish Style Pickled Eggs

Ingredients:

  • Ingredients

    • 12 eggs
    • 1 medium onion, thinly sliced
    • 3/4 cup water
    • 1 cup white sugar
    • 1 1/4 cups white vinegar
    • 2 teaspoons salt
    • 1/4 teaspoon garlic powder
    • 1/2 teaspoon mustard seed
    • 1 teaspoon dried dill weed

Preparation:

  1. Place eggs in a large pot and bring to a boil. Cover and remove from heat.
  2. Let stand for 10 minutes and then cool under running water, and remove shells. Place eggs in a large jar.
  3. In a saucepan, combine the ingredients and bring to a boil.
  4. Simmer over low heat for 5 to 7 minutes and allow to cool.
  5. Pour in the jar and refrigerate for at least 4 days. The eggs will be yellow when pickled.

Garlic Pickled Eggs

Ingredients

  • 12 eggs
  • 1 onion, sliced into rings
  • 1 cup water
  • 1/4 cup white sugar
  • 10 cloves garlic, peeled
  • 1 cup distilled white vinegar

Preparation:

  1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
  2. Place the eggs in a jar with the onion rings.
  3. In a pan, boil the vinegar, water, sugar and garlic. Remove from heat and allow to cool for 15 minutes.
  4. Pour the vinegar mixture over the eggs and cover. Refrigerate 1 week before serving.


Deviled Eggs with Mustard

Ingredients:

  • 6 hard-boiled eggs
  • 1 to 1 1/2 tablespoons mayonnaise, or to moisten
  • 1 teaspoon prepared mustard, or to taste
  • 1/2 teaspoon salt
  • 2 tablespoons sweet pickle relish, or to taste
  • Paprika

Preparation:

  1. Cut hard-cooked eggs lengthwise.
  2. Remove and mash the yolks; combine with mayonnaise, mustard, salt, and relish.
  3. Refill centers of the egg whites with the mixture. Garnish with paprika.

Deviled Eggs

Ingredients:

  • 7 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon prepared mustard
  • salt and pepper
  • paprika, optional
  • 6 pimiento stuffed olives, cut in hal

Preparation:

  1. Cut 6 of the hard boiled eggs in half.
  2. Remove the yolks.
  3. Press yolks and remaining whole hard cooked egg through a sieve into a bowl.
  4. Stir in mayonnaise and mustard; season to taste with salt and pepper.
  5. Sprinkle with a little paprika and top with an olive half.

Spicey Deviled Eggs

Ingredients:

  • 12 hard boiled eggs peeled
  • 1/2 cup mayonnaise
  • 1 Tbl honey mustard
  • 1/4 Tsp black pepper
  • 4 strips of finely chopped bacon
  • 2-3 fresh habaneros cut into rings
  • 1 Tbl finely shredded sharp cheddar
  • 1 Tbl finely shredded pepper jack
  • 1 Tbl finely minced jalapeno pepper
Preparation:
  1. Cut eggs lengthwise.
  2. Remove yolks and place in a bowl.
  3. Mash yolks with a fork.
  4. Add the mayo, mustard and pepper.
  5. Beat with a hand mixer until lumps are gone.
  6. Fold in the bacon, cheddar, jack, and jalapenos.
  7. Spoon mixture into whites.
  8. Apply a habanero ring to the top.
